Besan Ki Barfi - The Sweet Dessert Recipe For Occasions
The Besan Barfi is so easy & also it needs some simple components. This usual dry sweet recipe is made specifically in the time of winter & in the festivals like navratri or diwali. As we do with other barfi recipes, here also we could make it with toppings like cashews & almonds. There are so many Indian sweet food items made from chickpea flour or besan flour. Ingredients for Besan Barfi:
- clarified butter/ghee-¼ cup
- gram flour/besan-1 cup
- semolina/rava/sooji fine-2 tbsp
- sugar-½ cup
- water-¼ cup
- Elaichi powder/cardamom powder-¼ tsp
- Sliced kaju/cashew-2 tbsp
Methods to prepare Besan Barfi:
- First, in a big kadai heat ¼ cup ghee & roast one cup besan, two tablespoon rava with low flame.
- Stir constantly until the besan mix well without lumps.
- Continuously fry it on low flame until the mix becomes paste & slowly turns aromatic.
- Post 20-25 minutes, the mixture turns brown golden shows the besan is cooked thoroughly. Put it beside.
- Then in other pan / saucepan take ¼ cup water & ½ cup sugar.
- Dissolve sugar fully & boil for like eight mins.
- Check for one string sugar syrup’s consistency, else boil it further. Be cautious as the sugar syrup would be so hot.
- Then transfer the ready sugar syrup over besan mixture with no flame.
- Stir properly & make sure the sugar syrup combines uniformly & get thickens.
- Now drop ¼ teaspoon cardamom powder & then mix finely.
- Put the ready dough in greased plate lined with baking paper. In substitution, make balls to prepare besan laddu.
- Set well forming a block.
- Now make toppings of some sliced cashew & press little.
- Let it set for thirty mins, or until it sets completely.
- Next unmould & cut in the square pieces.
- Lastly, serve besan burfi or store it in airtight container.
